Agouti (coconut Curry Lamb)
Agouti is a delicious Togolese coconut curry lamb dish that is rich in flavor and perfect for a special meal or gathering.
Ingredients
- 1 1/2 lbs lamb, cut into cubes
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 2 tomatoes, diced
- 2 tablespoons curry powder
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Cook until the onions are soft and translucent.
- Add the lamb cubes and brown on all sides.
- Stir in the curry powder and cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and chicken broth. Add the diced tomatoes, salt, and pepper. Stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 1 hour, stirring occasionally.
- Serve the agouti hot with rice or flatbread.
