Ingredients

  • 1 1/2 lbs lamb, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 tomatoes, diced
  • 2 tablespoons curry powder
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Cook until the onions are soft and translucent.
  3. Add the lamb cubes and brown on all sides.
  4. Stir in the curry powder and cook for 1-2 minutes until fragrant.
  5. Pour in the coconut milk and chicken broth. Add the diced tomatoes, salt, and pepper. Stir to combine.
  6. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 1 hour, stirring occasionally.
  7. Serve the agouti hot with rice or flatbread.
