आगरा का बेड़ई (Agra Ka Bedai) is a popular breakfast dish from the state of Uttar Pradesh, India. It is a spicy and flavorful dish that is enjoyed with chutney or aloo sabzi.

Agra Ka Bedai (आगरा का बेड़ई)

Ingredients

  • 500g wheat flour
  • 100g urad dal
  • 2 onions, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp ginger, grated
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1/2 tsp asafoetida
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Oil for frying

Instructions

  1. Soak the urad dal in water for 4-5 hours, then grind it to a coarse paste.
  2. In a bowl, mix the wheat flour, urad dal paste, onions, green chilies, ginger, fennel seeds, cumin seeds, asafoetida, turmeric powder, red chili powder, garam masala, and salt. Knead the mixture into a stiff dough.
  3. Divide the dough into small balls and roll them out into small puris.
  4. Heat oil in a pan and fry the puris until they are golden brown and crispy.
