Agra Ka Bedai Sabzi is a traditional dish from the state of Uttar Pradesh, India. It is a flavorful and spicy curry made with bedai, a type of crispy lentil stuffed bread, and a medley of aromatic spices.

Agra Ka Bedai Sabzi (आगरा का बेड़ई सब्जी)

Ingredients

  • Bedai - 8 pieces
  • Onion - 2, finely chopped
  • Tomato - 2, pureed
  • Ginger - 1-inch piece, grated
  • Garlic - 4 cloves, minced
  • Green chilies - 2, slit
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Oil - 3 tablespoons
  • Fresh coriander leaves - for garnish

Instructions

  1. Heat oil in a pan and fry the bedai until they turn golden and crispy. Remove and set aside.
  2. In the same pan, add more oil if needed and sauté the onions until golden brown.
  3. Add the ginger, garlic, and green chilies. Sauté for a few minutes.
  4. Stir in the tomato puree and cook until the oil separates.
  5. Add the turmeric, coriander, cumin, red chili powder, garam masala, and salt. Cook for a few minutes.
  6. Pour in 2 cups of water and bring to a boil. Simmer for 10 minutes.
  7. Add the fried bedai to the curry and simmer for another 5 minutes.
  8. Garnish with fresh coriander leaves and serve hot.
