Agra Ka Bedai Sabzi (आगरा का बेड़ई सब्जी)
Agra Ka Bedai Sabzi is a traditional dish from the state of Uttar Pradesh, India. It is a flavorful and spicy curry made with bedai, a type of crispy lentil stuffed bread, and a medley of aromatic spices.
Ingredients
- Bedai - 8 pieces
- Onion - 2, finely chopped
- Tomato - 2, pureed
- Ginger - 1-inch piece, grated
- Garlic - 4 cloves, minced
- Green chilies - 2, slit
- Turmeric powder - 1 teaspoon
- Coriander powder - 1 tablespoon
- Cumin powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Oil - 3 tablespoons
- Fresh coriander leaves - for garnish
Instructions
- Heat oil in a pan and fry the bedai until they turn golden and crispy. Remove and set aside.
- In the same pan, add more oil if needed and sauté the onions until golden brown.
- Add the ginger, garlic, and green chilies. Sauté for a few minutes.
- Stir in the tomato puree and cook until the oil separates.
- Add the turmeric, coriander, cumin, red chili powder, garam masala, and salt. Cook for a few minutes.
- Pour in 2 cups of water and bring to a boil. Simmer for 10 minutes.
- Add the fried bedai to the curry and simmer for another 5 minutes.
- Garnish with fresh coriander leaves and serve hot.
