Agra Ka Petha Pulao (आगरा का पेठा पुलाव)
Agra Ka Petha Pulao is a delicious and aromatic rice dish from the Uttar Pradesh Cuisine. This unique pulao is made with the famous Agra Petha, a sweet candy made from ash gourd, and is sure to tantalize your taste buds with its sweet and savory flavors.
Ingredients
- 2 cups basmati rice
- 1 cup Agra Petha, diced
- 1 onion, thinly sliced
- 1 tomato, chopped
- 1/2 cup green peas
- 2 green chilies, slit
- 1-inch ginger, grated
- 4 cloves garlic, minced
- 1 cinnamon stick
- 4 green cardamom pods
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 tablespoons ghee (clarified butter)
- Salt to taste
- 4 cups water
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat ghee in a large pot or pressure cooker. Add cumin seeds, cinnamon stick, and green cardamom pods. Sauté until fragrant.
- Add sliced onions, green chilies, grated ginger, and minced garlic. Sauté until the onions are golden brown.
- Stir in the diced Agra Petha, chopped tomatoes, green peas, turmeric powder, and garam masala. Cook for 5 minutes.
- Add the soaked rice and salt. Mix well to coat the rice with the spices.
- Pour in the water and bring to a boil. Reduce the heat, cover, and cook until the rice is tender and the water is absorbed.
- Fluff the pulao with a fork and serve hot.
