Agra Ke Bhalle Papdi (आगरा के भल्ले पापड़ी)

Ingredients
- 1 cup urad dal (black gram lentils), soaked
- 1/2 cup moong dal (split mung beans), soaked
- 1/2 inch ginger, chopped
- 2 green chilies, chopped
- 1/2 tsp cumin seeds
- 1/2 tsp black salt
- 1/2 tsp chaat masala
- 1/4 tsp baking soda
- Oil for frying
- 20-25 papdis
- 1 cup thick yogurt
- 1/2 cup tamarind chutney
- 1/2 cup green chutney
- 1/4 cup sev (crunchy chickpea noodles)
- 2 tbsp finely chopped coriander leaves
Instructions
- In a blender, grind the soaked urad dal and moong dal to a smooth paste.
- Add chopped ginger, green chilies, cumin seeds, black salt, chaat masala, and baking soda to the dal paste. Mix well.
- Heat oil in a pan for frying. Take small portions of the dal mixture and drop them into the hot oil to make bhallas (round fritters). Fry until golden brown and crispy.
- Soak the fried bhallas in water for 15-20 minutes, then gently squeeze out the water and set aside.
- Arrange the papdis on a serving plate. Place a bhalla on each papdi.
- Top the bhallas with a generous amount of thick yogurt, tamarind chutney, and green chutney.
- Sprinkle chaat masala, black salt, and sev on top. Garnish with chopped coriander leaves.
- Serve immediately and enjoy the delicious Agra Ke Bhalle Papdi!
