Agra Ke Bhalle Papdi (आगरा के भल्ले पापड़ी)

Ingredients

  • 1 cup urad dal (black gram lentils), soaked
  • 1/2 cup moong dal (split mung beans), soaked
  • 1/2 inch ginger, chopped
  • 2 green chilies, chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp black salt
  • 1/2 tsp chaat masala
  • 1/4 tsp baking soda
  • Oil for frying
  • 20-25 papdis
  • 1 cup thick yogurt
  • 1/2 cup tamarind chutney
  • 1/2 cup green chutney
  • 1/4 cup sev (crunchy chickpea noodles)
  • 2 tbsp finely chopped coriander leaves

Instructions

  1. In a blender, grind the soaked urad dal and moong dal to a smooth paste.
  2. Add chopped ginger, green chilies, cumin seeds, black salt, chaat masala, and baking soda to the dal paste. Mix well.
  3. Heat oil in a pan for frying. Take small portions of the dal mixture and drop them into the hot oil to make bhallas (round fritters). Fry until golden brown and crispy.
  4. Soak the fried bhallas in water for 15-20 minutes, then gently squeeze out the water and set aside.
  5. Arrange the papdis on a serving plate. Place a bhalla on each papdi.
  6. Top the bhallas with a generous amount of thick yogurt, tamarind chutney, and green chutney.
  7. Sprinkle chaat masala, black salt, and sev on top. Garnish with chopped coriander leaves.
  8. Serve immediately and enjoy the delicious Agra Ke Bhalle Papdi!
