Agra Ke Petha Ki Kheer (आगरा के पेठे की खीर)
Agra Ke Petha Ki Kheer is a traditional dessert from the state of Uttar Pradesh, India. This creamy and aromatic kheer is made using the famous Agra Petha, a sweet candy made from ash gourd, and is a delightful treat for special occasions.
Ingredients
- 1 cup grated Agra Petha
- 1 liter full-fat milk
- 1/2 cup sugar
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, pistachios, cashews)
- 1 tablespoon raisins
Instructions
- In a heavy-bottomed pan, bring the milk to a boil.
- Add the grated Agra Petha and simmer on low heat, stirring occasionally, until the milk reduces to half.
- Add sugar and cardamom powder, and continue to cook until the kheer thickens to the desired consistency.
- Stir in the chopped nuts and raisins, and cook for another 2-3 minutes.
- Remove from heat and let it cool to room temperature.
- Refrigerate the kheer for a few hours before serving.
