Ahal Vilayeti Qovurma (ahal Province Lamb Stew)
Ahal Vilayeti Qovurma is a traditional Turkmen lamb stew that is rich in flavor and perfect for a comforting meal. This hearty dish is a staple in Turkmen cuisine and is often enjoyed with flatbread or rice.
Ingredients
- 1 kg lamb, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 2 potatoes, peeled and cubed
- 1 bell pepper, diced
- 2 tbsp vegetable oil
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 cups water
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions are translucent.
- Add the lamb cubes to the pot and brown them on all sides.
- Stir in the diced tomatoes, cumin, paprika, salt, and pepper.
- Pour in the water and bring the stew to a boil.
- Reduce the heat to low, cover the pot, and let the stew simmer for 1.5 hours, stirring occasionally.
- Add the cubed potatoes and diced bell pepper to the stew, and continue to simmer for an additional 30 minutes or until the lamb is tender and the potatoes are cooked through.
- Adjust the seasoning if needed, and serve the Ahal Vilayeti Qovurma hot.
