Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon almond extract
  • 1/4 cup amaretto liqueur
  • 1 cup whole almonds, toasted and coarsely chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the butter until creamy. Add the eggs, almond extract, and amaretto, and mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the chopped almonds.
  5. Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, leaving space between them.
  6. Bake for 25 minutes, or until the logs are firm to the touch. Remove from the oven and let cool for 10 minutes.
  7. Using a serrated knife, slice the logs diagonally into 1/2-inch thick biscotti. Place the biscotti cut side down on the baking sheet.
  8. Return the biscotti to the oven and bake for an additional 15 minutes, or until they are golden and crisp. Cool completely before serving.
