Ahu Akivi Arancini
Ahu Akivi Arancini is a delicious dish inspired by the flavors of Pascuense (Easter Island) cuisine. These savory rice balls are filled with a flavorful mixture of ingredients and then coated in crispy breadcrumbs before being fried to perfection.
Ingredients
- 3 cups cooked rice
- 1/2 cup grated mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped ham
- 1/4 cup finely chopped onion
- 1/4 cup frozen peas, thawed
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked rice, mozzarella cheese, Parmesan cheese, ham, onion, and peas. Season with salt and pepper to taste.
- Take a small portion of the rice mixture and form it into a ball. Make a small indentation in the center and place a small piece of mozzarella cheese in the middle. Close the rice around the cheese to form a ball. Repeat with the remaining rice mixture.
- Dip each rice ball into the beaten eggs, then roll in the breadcrumbs until fully coated.
- In a large skillet, heat vegetable oil over medium heat. Fry the arancini in batches until golden brown and crispy on all sides. Remove and drain on paper towels.
- Serve the Ahu Akivi Arancini hot and enjoy!
