Ahu Akivi Arancini

Ingredients

  • 3 cups cooked rice
  • 1/2 cup grated mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped ham
  • 1/4 cup finely chopped onion
  • 1/4 cup frozen peas, thawed
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked rice, mozzarella cheese, Parmesan cheese, ham, onion, and peas. Season with salt and pepper to taste.
  2. Take a small portion of the rice mixture and form it into a ball. Make a small indentation in the center and place a small piece of mozzarella cheese in the middle. Close the rice around the cheese to form a ball. Repeat with the remaining rice mixture.
  3. Dip each rice ball into the beaten eggs, then roll in the breadcrumbs until fully coated.
  4. In a large skillet, heat vegetable oil over medium heat. Fry the arancini in batches until golden brown and crispy on all sides. Remove and drain on paper towels.
  5. Serve the Ahu Akivi Arancini hot and enjoy!
