Ingredients

  • 300g spaghetti
  • 200g ground pork
  • 1 onion, diced

  • 2 cups dashi broth
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 2 green onions, chopped
  • 4 eggs

Instructions

  1. Boil the spaghetti according to package instructions. Drain and set aside.
  2. In a large skillet, cook the ground pork over medium heat until browned.
  3. Add the diced onion, julienned carrot, and sliced shiitake mushrooms to the skillet. Cook until the vegetables are tender.
  4. Pour in the dashi broth, soy sauce, and mirin. Bring to a simmer.
  5. In a small bowl, mix the cornstarch and water to create a slurry. Slowly pour the slurry into the skillet, stirring constantly, until the sauce thickens.
  6. Add the cooked spaghetti to the skillet and toss to coat with the ankake sauce.
  7. In a separate pan, fry the eggs to your desired doneness.
