Ingredients
- 300g spaghetti
- 200g ground pork
- 1 onion, diced
- 1 carrot, julienned
- 1/2 cup shiitake mushrooms, sliced
- 2 cups dashi broth
- 3 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp cornstarch
- 2 tbsp water
- 2 green onions, chopped
- 4 eggs
Instructions
- Boil the spaghetti according to package instructions. Drain and set aside.
- In a large skillet, cook the ground pork over medium heat until browned.
- Add the diced onion, julienned carrot, and sliced shiitake mushrooms to the skillet. Cook until the vegetables are tender.
- Pour in the dashi broth, soy sauce, and mirin. Bring to a simmer.
- In a small bowl, mix the cornstarch and water to create a slurry. Slowly pour the slurry into the skillet, stirring constantly, until the sauce thickens.
- Add the cooked spaghetti to the skillet and toss to coat with the ankake sauce.
- In a separate pan, fry the eggs to your desired doneness.
- To serve, divide the spaghetti among plates, top each portion with a fried egg, and garnish with chopped green onions.
