Ingredients
- 4 duck breasts
- 1 cup wild berries
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Score the skin of the duck breasts and season with salt and pepper.
- Heat a pan over medium heat and place the duck breasts skin-side down. Cook for 6-8 minutes until the skin is crispy.
- Flip the duck breasts and cook for another 4-5 minutes for medium-rare, or longer to your desired doneness. Remove from the pan and let rest.
- In the same pan, add the wild berries, soy sauce, mirin, and honey. Cook until the berries break down and the sauce thickens.
- Slice the duck breasts and serve with the wild berry reduction.
