Ingredients
- 2 lbs lamb ribs
- 1 tbsp juniper berries
- 1/4 cup soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 2 tbsp brown sugar
- 1/4 cup water
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- Season the lamb ribs with salt and pepper, then place them in a roasting pan.
- In a small saucepan, combine the juniper berries, soy sauce, mirin, sake, brown sugar, and water. Bring to a simmer over medium heat, then remove from the heat.
- Pour the juniper berry sauce over the lamb ribs, covering them evenly.
- Cover the roasting pan with foil and roast in the preheated oven for 1.5 to 2 hours, or until the meat is tender.
- Remove the foil during the last 15 minutes of cooking to allow the ribs to brown.
- Once cooked, remove the lamb ribs from the oven and let them rest for 5 minutes before serving.
