Ingredients

  • 2 lbs lamb ribs
  • 1 tbsp juniper berries
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 2 tbsp sake
  • 2 tbsp brown sugar
  • 1/4 cup water
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the lamb ribs with salt and pepper, then place them in a roasting pan.
  3. In a small saucepan, combine the juniper berries, soy sauce, mirin, sake, brown sugar, and water. Bring to a simmer over medium heat, then remove from the heat.
  4. Pour the juniper berry sauce over the lamb ribs, covering them evenly.
  5. Cover the roasting pan with foil and roast in the preheated oven for 1.5 to 2 hours, or until the meat is tender.
  6. Remove the foil during the last 15 minutes of cooking to allow the ribs to brown.
  7. Once cooked, remove the lamb ribs from the oven and let them rest for 5 minutes before serving.
