Ingredients
- 1 lb fresh salmon, cut into chunks
- 4 cups diced potatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups fish or vegetable broth
- 1 cup coconut milk
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- Add the salmon chunks to the pot and cook for 5-7 minutes, until the salmon is cooked through.
