Ingredients

  • 1 lb smoked trout, flaked
  • 4 cups dashi broth
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sake
  • 1/4 cup wakame seaweed, rehydrated
  • 4 green onions, thinly sliced
  • 2 eggs, beaten
  • 2 tbsp miso paste

Instructions

  1. In a pot, bring the dashi broth, soy sauce, mirin, and sake to a simmer.
  2. Add the flaked smoked trout and rehydrated wakame seaweed to the pot.
  3. In a small bowl, mix the miso paste with a ladle of the hot broth until smooth, then add it back to the pot.
  4. Slowly pour the beaten eggs into the soup while gently stirring to create egg ribbons.
