Ingredients

Instructions

  1. In a large bowl, mix together the shredded chicken, ají de gallina sauce, chopped onion, walnuts, parmesan cheese, evaporated milk, vegetable oil, minced garlic, salt, and pepper.
  2. Place a spoonful of the chicken mixture onto the center of each empanada disc.
  3. Brush the edges of the empanada discs with the beaten egg, then fold the dough over the filling to create a half-moon shape. Press the edges together to seal, then crimp with a fork to create a decorative edge.
  4. Place the empanadas on a baking sheet lined with parchment paper, and brush the tops with the remaining beaten egg.
  5. Bake in a preheated oven at 375°F for 25-30 minutes, or until the empanadas are golden brown and crispy.
