Ajvar (roasted Red Pepper Dip)
Ajvar is a popular roasted red pepper dip in Montenegrin cuisine, known for its rich and smoky flavor. It is a versatile condiment that can be served with bread, meats, or used as a spread in sandwiches.
Ingredients
- 4 red bell peppers
- 2 garlic cloves
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions
- Preheat the broiler in the oven.
- Place the red bell peppers on a baking sheet and broil for 15-20 minutes, turning occasionally, until the skin is charred and blistered.
- Transfer the roasted peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes.
- Peel off the charred skin, remove the seeds and stems, and chop the peppers.
- In a food processor, combine the chopped peppers, garlic, olive oil, and red wine vinegar. Blend until smooth.
- Season with salt and pepper to taste.
- Transfer the ajvar to a serving bowl and refrigerate for at least 1 hour before serving.
