Ajvar (roasted Red Pepper Dip)

Ingredients

  • 4 red bell peppers
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the broiler in the oven.
  2. Place the red bell peppers on a baking sheet and broil for 15-20 minutes, turning occasionally, until the skin is charred and blistered.
  3. Transfer the roasted peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes.
  4. Peel off the charred skin, remove the seeds and stems, and chop the peppers.
  5. In a food processor, combine the chopped peppers, garlic, olive oil, and red wine vinegar. Blend until smooth.
  6. Season with salt and pepper to taste.
  7. Transfer the ajvar to a serving bowl and refrigerate for at least 1 hour before serving.
