Ingredients

  • 2 large eggplants
  • 2 red bell peppers
  • 2 garlic cloves, minced
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the whole eggplants and red bell peppers on a baking sheet and roast for 30-40 minutes, or until the skin is charred and the vegetables are tender.
  3. Remove the roasted vegetables from the oven and let them cool. Peel off the skin and remove the seeds from the peppers.
  4. Place the roasted eggplants, red peppers, and minced garlic in a food processor and blend until smooth.
  5. While the food processor is running, slowly drizzle in the olive oil and red wine vinegar. Season with salt and pepper to taste.
  6. Transfer the ajvar to a serving bowl and refrigerate for at least 1 hour before serving.
