Ajvar (smoky Eggplant Spread)
Ajvar is a smoky eggplant spread that originates from Tatar cuisine. It is a versatile and flavorful condiment that can be used as a dip, spread, or sauce.
Ingredients
- 2 large eggplants
- 2 red bell peppers
- 2 garlic cloves, minced
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the whole eggplants and red bell peppers on a baking sheet and roast for 30-40 minutes, or until the skin is charred and the vegetables are tender.
- Remove the roasted vegetables from the oven and let them cool. Peel off the skin and remove the seeds from the peppers.
- Place the roasted eggplants, red peppers, and minced garlic in a food processor and blend until smooth.
- While the food processor is running, slowly drizzle in the olive oil and red wine vinegar. Season with salt and pepper to taste.
- Transfer the ajvar to a serving bowl and refrigerate for at least 1 hour before serving.
