Ingredients
- 2 cups grated cassava
- 1 small onion, finely chopped

- 1 small onion, chopped
- 2-3 hot peppers, chopped
- 1 tablespoon tomato paste
- Salt to taste
Instructions
- In a large bowl, mix the grated cassava, chopped onion, hot peppers, and salt until well combined.
- Heat the vegetable oil in a deep skillet over medium heat.
- Scoop the cassava mixture into small balls and carefully drop them into the hot oil.
- Fry the fritters until golden brown and crispy, then remove and drain on paper towels.
- To make the spicy sauce, combine the chopped tomatoes, onion, hot peppers, and tomato paste in a saucepan. Cook over medium heat until the tomatoes break down and the sauce thickens. Season with salt to taste.
- Serve the cassava fritters with the spicy sauce on the side.
