Ingredients

  • 2 cups grated cassava

  • 2 tomatoes, chopped
  • 1 small onion, chopped
  • 2-3 hot peppers, chopped
  • 1 tablespoon tomato paste
  • Salt to taste

Instructions

  1. In a large bowl, mix the grated cassava, chopped onion, hot peppers, and salt until well combined.
  2. Heat the vegetable oil in a deep skillet over medium heat.
  3. Scoop the cassava mixture into small balls and carefully drop them into the hot oil.
  4. Fry the fritters until golden brown and crispy, then remove and drain on paper towels.
  5. To make the spicy sauce, combine the chopped tomatoes, onion, hot peppers, and tomato paste in a saucepan. Cook over medium heat until the tomatoes break down and the sauce thickens. Season with salt to taste.
