Ingredients
- 1 cup of black-eyed peas, soaked overnight
- 1 onion, finely chopped

- 1 cup of all-purpose flour
- 2 eggs
- 1 1/2 cups of milk
- 2 tomatoes, diced
- 1/2 onion, finely chopped
- 1/4 cup of fresh cilantro, chopped
- 1 tablespoon of lime juice
- Salt and pepper to taste
Instructions
- In a blender, combine the soaked black-eyed peas, chopped onion, salt, and ground red pepper. Blend until smooth.
- In a bowl, mix the black-eyed pea mixture with the all-purpose flour, eggs, and milk to form a smooth batter.
- Heat a non-stick pan over medium heat and pour a ladleful of the batter to make a thin crêpe. Cook for 2-3 minutes on each side until golden brown. Repeat with the remaining batter.
