Ingredients

  • 2 cups mashed yams

  • 1 teaspoon salt

Instructions

  1. In a large bowl, mix together the mashed yams, chopped onion, cayenne pepper, and salt.
  2. Heat the vegetable oil in a deep pot or skillet over medium heat.
  3. Scoop spoonfuls of the yam mixture and carefully drop them into the hot oil.
  4. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
