Akara (yambio Yam Fritters)

Ingredients
- 2 cups mashed yams
- 1 small onion, finely chopped
- 1 teaspoon ground cayenne pepper
- 1 teaspoon salt
- Vegetable oil for frying
Instructions
- In a large bowl, mix together the mashed yams, chopped onion, cayenne pepper, and salt.
- Heat the vegetable oil in a deep pot or skillet over medium heat.
- Scoop spoonfuls of the yam mixture and carefully drop them into the hot oil.
- Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
