Akutaq (eskimo Ice Cream Sandwiches)

Akutaq, also known as Eskimo ice cream, is a traditional Yup'ik dessert made with a combination of berries, fat, and sometimes fish. In this recipe, we'll be making Akutaq into delicious ice cream sandwiches!

Akutaq (eskimo Ice Cream Sandwiches)

Ingredients

  • 2 cups mixed berries (blueberries, raspberries, or salmonberries)
  • 1/4 cup sugar
  • 1/2 cup vegetable shortening
  • 1/4 cup powdered milk
  • 1 teaspoon vanilla extract
  • 12 graham crackers

Instructions

  1. In a bowl, mix the berries and sugar together. Let them sit for 10 minutes to macerate.
  2. In another bowl, mix the vegetable shortening, powdered milk, and vanilla extract until smooth.
  3. Crush the graham crackers into fine crumbs and spread them out on a plate.
  4. Take a graham cracker, spread a spoonful of the vegetable shortening mixture on top, then add a spoonful of the macerated berries, and finally top with another graham cracker to make a sandwich.
  5. Roll the edges of the sandwich in the graham cracker crumbs to coat.
  6. Repeat with the remaining ingredients to make 6 ice cream sandwiches.
  7. Place the sandwiches on a tray and freeze for at least 2 hours before serving.
