Ingredients

  • 4 large potatoes, peeled and cubed
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 green chilies, sliced
  • 1 tsp chili powder
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 1 tbsp soy sauce
  • 1 tbsp ketchup
  • Salt to taste
  • Pepper to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Boil the cubed potatoes until they are just tender. Drain and set aside.
  2. Heat the vegetable oil in a pan over medium heat. Add the sliced onion and green chilies, and sauté until the onion is soft and translucent.
  3. Stir in the chili powder, turmeric, and curry powder, and cook for 1-2 minutes.
  4. Add the boiled potatoes to the pan, along with soy sauce, ketchup, salt, and pepper. Stir well to coat the potatoes with the spicy sauce.
  5. Cook for another 5-7 minutes, stirring occasionally, until the potatoes are crispy and golden brown.
  6. Garnish with fresh coriander leaves before serving.
