Albanian Bean Salad (Salatë me Fasule)

Ingredients
- 1 can of white beans, drained and rinsed
- 1 red onion, thinly sliced
- 2 tomatoes, diced
- 1 cucumber, diced
- 1 green bell pepper, diced
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the white beans, red onion, tomatoes, cucumber, and green bell pepper.
- In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
- Pour the dressing over the bean mixture and toss to coat evenly.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
