Albanian Beef Stew with Vegetables (Tavë Kosi me Perime)

Ingredients

  • 1 lb beef, cubed
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • 1 cup beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 2 eggs
  • 2 tablespoons flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, heat the olive oil over medium heat. Add the beef and cook until browned on all sides.
  3. Add the onion, carrots, potatoes, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  4. Add the tomatoes, beef broth, oregano, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the beef and vegetables are tender.
  5. In a bowl, whisk together the yogurt, eggs, and flour. Pour the mixture over the stew.
  6. Transfer the pot to the preheated oven and bake for 30 minutes, or until the top is golden brown.
