Albanian Beef Stew with Vegetables (Tavë Kosi me Perime)

Ingredients
- 1 lb beef, cubed
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 1 cup beef broth
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup plain yogurt
- 2 eggs
- 2 tablespoons flour
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, heat the olive oil over medium heat. Add the beef and cook until browned on all sides.
- Add the onion, carrots, potatoes, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Add the tomatoes, beef broth, oregano, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the beef and vegetables are tender.
- In a bowl, whisk together the yogurt, eggs, and flour. Pour the mixture over the stew.
- Transfer the pot to the preheated oven and bake for 30 minutes, or until the top is golden brown.
