Albanian Burek with Cheese (Burek me Djathë)

Ingredients

  • 500g phyllo dough
  • 250g feta cheese, crumbled
  • 250g ricotta cheese
  • 2 eggs, beaten
  • 1/2 cup unsalted butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the feta cheese, ricotta cheese, and beaten eggs. Season with salt and pepper.
  3. Unroll the phyllo dough and cut it into 3-inch wide strips.
  4. Take one strip of phyllo dough and brush it with melted butter. Place a spoonful of the cheese mixture at one end of the strip.
  5. Roll the phyllo dough over the cheese mixture to form a triangle-shaped parcel. Continue rolling until all the dough and cheese mixture are used.
  6. Place the burek on a baking sheet lined with parchment paper and brush the tops with more melted butter.
  7. Bake in the preheated oven for 35-40 minutes, or until the burek is golden brown and crispy.
  8. Remove from the oven and let it cool for a few minutes before serving.
