Albanian Chicken and Rice Casserole (Tavë Pule me Oriz)

Ingredients
- 4 chicken thighs
- 2 cups long-grain rice
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, garlic, and red bell pepper. Cook until the vegetables are softened.
- Add the rice, diced tomatoes, chicken broth, paprika, oregano, salt, and pepper to the skillet. Stir to combine.
- Place the browned chicken thighs on top of the rice mixture.
- Cover the skillet and let the Tavë Pule me Oriz simmer for 30-40 minutes, or until the rice is cooked and the chicken is tender.
