Albanian Chicken and Rice Casserole (Tavë Pule me Oriz)

Ingredients

  • 4 chicken thighs
  • 2 cups long-grain rice
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the chopped onion, garlic, and red bell pepper. Cook until the vegetables are softened.
  3. Add the rice, diced tomatoes, chicken broth, paprika, oregano, salt, and pepper to the skillet. Stir to combine.
