Ingredients

  • 6 cups all-purpose flour
  • 10 cups water
  • 1 cup yogurt
  • 1 cup butter
  • Salt to taste

Instructions

  1. In a large bowl, mix the flour and water to create a thin batter.
  2. Heat a non-stick pan over medium heat and pour a ladleful of batter to make a thin pancake. Cook until the edges start to lift, then flip and cook the other side. Repeat with the remaining batter.
  3. Layer the cooked pancakes on top of each other, spreading a thin layer of yogurt between each one.
  4. Continue layering until all the pancakes are used up.
  5. Top the final layer with some yogurt and then cover the pan with a lid.
  6. Cook on low heat for about 45 minutes to 1 hour, or until the flija is cooked through and has a golden crust on the bottom.
  7. Melt the butter and pour it over the flija, then cut it into squares and serve.
