Albanian Flija, also known as Albanian Flija, is a traditional dish from Balkan cuisine that is made with multiple layers of crepe-like pancakes and cooked in a special way to create a delicious and unique texture.
Ingredients
- 6 cups all-purpose flour
- 10 cups water
- 1 cup yogurt
- 1 cup butter
- Salt to taste
Instructions
- In a large bowl, mix the flour and water to create a thin batter.
- Heat a non-stick pan over medium heat and pour a ladleful of batter to make a thin pancake. Cook until the edges start to lift, then flip and cook the other side. Repeat with the remaining batter.
- Layer the cooked pancakes on top of each other, spreading a thin layer of yogurt between each one.
- Continue layering until all the pancakes are used up.
- Top the final layer with some yogurt and then cover the pan with a lid.
- Cook on low heat for about 45 minutes to 1 hour, or until the flija is cooked through and has a golden crust on the bottom.
- Melt the butter and pour it over the flija, then cut it into squares and serve.
