Albanian Lentil and Vegetable Stew (Speca të Mbushur)
Speca të Mbushur is a traditional Albanian lentil and vegetable stew that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 3 garlic cloves, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Rinse the lentils and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
- Add the garlic, paprika, and cumin. Cook for another 2 minutes.
- Stir in the lentils and vegetable broth. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the speca të mbushur hot, garnished with fresh herbs if desired.
