Albanian Lentil and Vegetable Stew (Speca të Mbushur)

Ingredients

  • 1 cup dried lentils
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, celery, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
  3. Add the garlic, paprika, and cumin. Cook for another 2 minutes.
  4. Stir in the lentils and vegetable broth. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve the speca të mbushur hot, garnished with fresh herbs if desired.
