Albanian Lentil Soup (Supë me Lesh)
Supë me Lesh, or Albanian Lentil Soup, is a traditional dish from the Arbëreshë cuisine, which is a unique blend of Albanian and Italian flavors. This hearty and nutritious soup is perfect for a comforting meal, especially during the colder months.
Ingredients
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are softened, about 5 minutes.
- Add the minced garlic, thyme, and paprika to the pot, and cook for an additional 2 minutes.
- Pour in the vegetable broth and add the rinsed lentils. Bring the soup to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils are tender.
- Season the soup with salt and pepper to taste.
- Serve the Supë me Lesh hot, garnished with fresh herbs if desired.
