Albanian Lentil Soup (Supë me Lëngje)
Supë me Lëngje, or Albanian Lentil Soup, is a traditional dish from Kosovan cuisine that is both hearty and nutritious. This simple and flavorful soup is perfect for a cozy meal on a cold day.
Ingredients
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook for 5 minutes until the vegetables are slightly softened.
- Add the garlic, thyme, and paprika. Cook for another 2 minutes.
- Pour in the vegetable broth and add the lentils. Bring the soup to a boil, then reduce the heat and simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
