Albanian Roasted Red Pepper Dip (Qepë të Djegur me Speca të Kuq)

Ingredients
- 4 red bell peppers
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the broiler in your oven.
- Place the red bell peppers on a baking sheet and broil for 10-15 minutes, turning occasionally, until the skins are charred and blistered.
- Transfer the roasted peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes.
- Peel off the charred skins, remove the seeds and stems, and chop the peppers.
- In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant.
- Add the chopped roasted peppers to the skillet and cook for 5-7 minutes, stirring occasionally.
- Transfer the mixture to a food processor and blend until smooth. Season with salt and pepper to taste.
- Transfer the dip to a serving bowl and drizzle with a little extra olive oil before serving.
