Albanian Roasted Red Pepper Dip (Qepë të Djegur me Speca të Kuq)

Ingredients

  • 4 red bell peppers
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the broiler in your oven.
  2. Place the red bell peppers on a baking sheet and broil for 10-15 minutes, turning occasionally, until the skins are charred and blistered.
  3. Transfer the roasted peppers to a bowl, cover with plastic wrap, and let them steam for 10 minutes.
  4. Peel off the charred skins, remove the seeds and stems, and chop the peppers.
  5. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant.
  6. Add the chopped roasted peppers to the skillet and cook for 5-7 minutes, stirring occasionally.
  7. Transfer the mixture to a food processor and blend until smooth. Season with salt and pepper to taste.
  8. Transfer the dip to a serving bowl and drizzle with a little extra olive oil before serving.
