Albanian Stuffed Cabbage Rolls with Rice and Beef (Sarma të Mbushur me Oriz dhe Mish)

Ingredients

  • 1 large head of cabbage
  • 1 cup uncooked rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, or until softened. Remove and set aside to cool.
  2. In a bowl, combine the uncooked rice, ground beef, chopped onion, minced garlic, paprika, salt, and pepper. Mix well to combine.
  3. Place a spoonful of the rice and beef mixture onto each cabbage leaf, then roll them up, tucking in the sides as you go.
  4. In a separate pot, mix together the tomato sauce and diced tomatoes. Season with salt and pepper to taste.
  5. Place the stuffed cabbage rolls into the pot with the tomato sauce mixture. Cover and simmer over low heat for 1 hour, or until the cabbage is tender and the filling is cooked through.
  6. Serve the stuffed cabbage rolls hot, spooning some of the tomato sauce over the top.
