Albanian Stuffed Peppers (Speca të Mbushur)
Speca të Mbushur, or Albanian Stuffed Peppers, is a traditional dish from the Arbëreshë cuisine, which is a unique blend of Albanian and Italian culinary traditions. This flavorful and hearty dish is perfect for a family dinner or a special occasion.
Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 lb ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/2 cup chopped parsley
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix the cooked rice, ground beef, onion, tomatoes, parsley, Parmesan cheese, salt, and pepper.
- Stuff the bell peppers with the mixture and place them in a baking dish.
- Drizzle the stuffed peppers with olive oil and cover the dish with aluminum foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is cooked through.
- Serve the stuffed peppers hot and enjoy!
