Albanian Stuffed Peppers (Speca të Mbushur)

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/2 cup chopped parsley
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix the cooked rice, ground beef, onion, tomatoes, parsley, Parmesan cheese, salt, and pepper.
  4. Stuff the bell peppers with the mixture and place them in a baking dish.
  5. Drizzle the stuffed peppers with olive oil and cover the dish with aluminum foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is cooked through.
  7. Serve the stuffed peppers hot and enjoy!
