Ingredients
- 4 large bell peppers
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the feta cheese, mozzarella cheese, cooked rice, onion, tomatoes, garlic, parsley, salt, and pepper.
- Stuff the bell peppers with the cheese and rice mixture.
- Place the stuffed peppers in a baking dish, drizzle with olive oil, and cover with the pepper tops.
- Bake for 30-35 minutes, or until the peppers are tender and the cheese is golden brown.
