Albanian Stuffed Peppers with Cheese (Speca të Mbushur me Djathë)

Ingredients

  • 4 large bell peppers
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the feta cheese, mozzarella cheese, cooked rice, onion, tomatoes, garlic, parsley, salt, and pepper.
  4. Stuff the bell peppers with the cheese and rice mixture.
