Albanian Stuffed Tomatoes with Rice and Herbs (Domate të Mbushura me Oriz dhe Erbëra)

Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the seeds and pulp. Sprinkle the insides with salt and let them drain upside down on a paper towel while preparing the filling.
  3. In a bowl, mix the cooked rice, chopped onion, minced garlic, chopped parsley, chopped mint, olive oil, salt, and pepper.
  4. Stuff the tomatoes with the rice mixture and place them in a baking dish. Replace the tomato tops.
  5. Bake for 30-40 minutes, until the tomatoes are tender and the filling is heated through.
  6. Serve the stuffed tomatoes hot or at room temperature.
