Albanian Style Stuffed Artichokes (Karxhi të Mbushur)
Karxhi të Mbushur, or Albanian Style Stuffed Artichokes, is a traditional Albanian dish that is bursting with flavor. This dish is perfect for a special occasion or a family gathering.
Ingredients
- 4 large artichokes
- 1 cup breadcrumbs
- 1/2 cup grated feta cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the tops. Steam them until tender, about 20 minutes.
- In a bowl, mix together the breadcrumbs, feta cheese, parsley, garlic, and olive oil. Season with salt and pepper.
- Once the artichokes are cool enough to handle, carefully spread the leaves apart and stuff the breadcrumb mixture between the leaves.
- Place the stuffed artichokes in a pot with a little water, cover, and simmer for 25 minutes.
- Serve the stuffed artichokes hot, drizzled with a little olive oil.
