Albanian Style Stuffed Artichokes (Karxhi të Mbushur)

Ingredients

  • 4 large artichokes
  • 1 cup breadcrumbs
  • 1/2 cup grated feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the tops. Steam them until tender, about 20 minutes.
  2. In a bowl, mix together the breadcrumbs, feta cheese, parsley, garlic, and olive oil. Season with salt and pepper.
  3. Once the artichokes are cool enough to handle, carefully spread the leaves apart and stuff the breadcrumb mixture between the leaves.
  4. Place the stuffed artichokes in a pot with a little water, cover, and simmer for 25 minutes.
  5. Serve the stuffed artichokes hot, drizzled with a little olive oil.
