Albanian Style Stuffed Bell Peppers (Kajsi të Mbushur)

Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup tomato sauce
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the ground beef, cooked rice, onion, garlic, paprika, oregano, salt, and pepper.
  4. Stuff the bell peppers with the meat and rice mixture.
  5. In a separate bowl, mix together the tomato sauce, chicken broth, and parsley.
  6. Place the stuffed peppers in a deep skillet or baking dish and pour the tomato sauce mixture over them.
  7. Cover the skillet or dish with a lid or foil and cook on the stovetop over medium heat for 45-50 minutes, or bake in the preheated oven for 50-55 minutes, until the peppers are tender.
  8. Serve the stuffed peppers hot, with a side of crusty bread or a fresh salad.
