Ingredients
- 4 large cucumbers
- 1 cup cooked rice
- 1/2 cup diced tomatoes
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 1/4 cup diced red onion
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Using a vegetable peeler, peel strips of skin from the cucumbers, leaving alternating strips of skin for a decorative look.
- Cut the cucumbers in half lengthwise and scoop out the seeds to create a hollow center.
- In a bowl, mix together the cooked rice, diced tomatoes, parsley, mint, red onion, olive oil, salt, and black pepper.
- Stuff the hollowed-out cucumbers with the rice mixture.
- Heat a large skillet over medium heat and place the stuffed cucumbers in the skillet.
- Cook for 5 minutes on each side, or until the cucumbers are tender and the filling is heated through.
