Albanian Style Stuffed Cucumbers (Kastravec të Mbushur)

Ingredients

  • 4 large cucumbers
  • 1 cup cooked rice
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1/4 cup diced red onion
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Using a vegetable peeler, peel strips of skin from the cucumbers, leaving alternating strips of skin for a decorative look.
  2. Cut the cucumbers in half lengthwise and scoop out the seeds to create a hollow center.
  3. In a bowl, mix together the cooked rice, diced tomatoes, parsley, mint, red onion, olive oil, salt, and black pepper.
  4. Stuff the hollowed-out cucumbers with the rice mixture.
  5. Heat a large skillet over medium heat and place the stuffed cucumbers in the skillet.
  6. Cook for 5 minutes on each side, or until the cucumbers are tender and the filling is heated through.
  7. Serve the stuffed cucumbers warm and enjoy!
