Albanian Style Stuffed Leeks (Presh të Mbushur)

Ingredients

  • 4 large leeks
  • 1 cup rice
  • 300g ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth

Instructions

  1. Cut off the root ends and dark green tops of the leeks, leaving the white and light green parts.
  2. Cut a lengthwise slit in each leek and carefully wash between the layers to remove any dirt.
  3. In a bowl, combine the rice, ground meat, onion, garlic, parsley, dill, paprika, salt, and pepper.
  4. Stuff the leeks with the rice and meat mixture, using a spoon to press the filling in tightly.
  5. Heat the olive oil in a large pot over medium heat and place the stuffed leeks in the pot.
  6. Pour the broth over the leeks, cover the pot, and simmer for 1 hour or until the leeks are tender and the filling is cooked.
  7. Serve the stuffed leeks hot, spooning some of the cooking liquid over the top as a sauce.
