Albanian Style Stuffed Leeks (Presh të Mbushur)

Ingredients
- 4 large leeks
- 1 cup rice
- 300g ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups chicken or vegetable broth
Instructions
- Cut off the root ends and dark green tops of the leeks, leaving the white and light green parts.
- Cut a lengthwise slit in each leek and carefully wash between the layers to remove any dirt.
- In a bowl, combine the rice, ground meat, onion, garlic, parsley, dill, paprika, salt, and pepper.
- Stuff the leeks with the rice and meat mixture, using a spoon to press the filling in tightly.
- Heat the olive oil in a large pot over medium heat and place the stuffed leeks in the pot.
- Pour the broth over the leeks, cover the pot, and simmer for 1 hour or until the leeks are tender and the filling is cooked.
- Serve the stuffed leeks hot, spooning some of the cooking liquid over the top as a sauce.
