Albanian Style Stuffed Mushrooms (Mjaltë të Mbushur)

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems and sauté them with the onion and garlic in olive oil until softened.
  3. Remove from heat and stir in the breadcrumbs, Parmesan cheese, parsley, salt, and pepper.
  4. Spoon the filling into the mushroom caps and place them on a baking sheet.
  5. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
