Albanian Style Stuffed Onions (Qepë të Mbushura)

Ingredients
- 4 large onions
- 1 cup rice
- 1/2 cup diced tomatoes
- 1/4 cup chopped parsley
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the onions and carefully remove the inner layers, leaving the outer layers intact.
- In a bowl, mix the rice, diced tomatoes, chopped parsley, olive oil, salt, and pepper.
- Stuff the onion shells with the rice mixture and place them in a baking dish.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the onions are tender and the rice is cooked.
- Serve the stuffed onions hot and enjoy!
