Albanian Style Stuffed Onions (Qepë të Mbushura)

Ingredients

  • 4 large onions
  • 1 cup rice
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the onions and carefully remove the inner layers, leaving the outer layers intact.
  3. In a bowl, mix the rice, diced tomatoes, chopped parsley, olive oil, salt, and pepper.
  4. Stuff the onion shells with the rice mixture and place them in a baking dish.
  5. Cover the dish with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15 minutes, or until the onions are tender and the rice is cooked.
  7. Serve the stuffed onions hot and enjoy!
