Albanian Style Stuffed Peppers (Speca të Mbushur)

Ingredients

  • 4 large bell peppers
  • 1 cup rice
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups beef or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the rice, ground beef, onion, tomatoes, parsley, paprika, salt, and pepper.
  4. Stuff the bell peppers with the rice and beef mixture.
  5. Place the stuffed peppers in a deep pot and pour the broth over them.
  6. Cover the pot and cook on the stovetop over medium heat for 30-40 minutes, or until the peppers are tender and the filling is cooked through.
  7. Serve the stuffed peppers hot, with a side of yogurt or a fresh salad.
