Albanian Style Stuffed Squash (Kungull të Mbushur)

Ingredients

  • 2 medium-sized squash
  • 1 cup ground meat (beef or lamb)
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the squash in half lengthwise and scoop out the seeds to create a hollow cavity.
  3. In a large bowl, mix together the ground meat, rice, onion, garlic, paprika, oregano, salt, and pepper.
  4. Stuff each squash half with the meat and rice mixture.
  5. Place the stuffed squash in a deep pot or Dutch oven. Pour the broth over the squash.
  6. Cover the pot and cook on the stovetop over medium heat for 1 hour, or until the squash is tender and the filling is cooked through.
