Ingredients
- 4 large tomatoes
- 1 cup cooked rice
- 1/2 lb ground meat (beef or lamb)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the seeds and pulp. Sprinkle the insides with salt and let them drain upside down on a paper towel while preparing the filling.
- In a large bowl, combine the cooked rice, ground meat, onion, garlic, parsley, mint, paprika, salt, and pepper. Mix well.
- Stuff the tomatoes with the rice and meat mixture, pressing gently to pack the filling.
- Place the stuffed tomatoes in a baking dish, drizzle with olive oil, and bake for 45 minutes or until the tomatoes are tender and the filling is cooked through.
- Serve the Domate të Mbushura hot, garnished with additional fresh herbs if desired.
