Albanian Style Stuffed Tomatoes (Domate të Mbushura)

Ingredients

  • 4 large tomatoes
  • 1 cup cooked rice
  • 1/2 lb ground meat (beef or lamb)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the seeds and pulp. Sprinkle the insides with salt and let them drain upside down on a paper towel while preparing the filling.
  3. In a large bowl, combine the cooked rice, ground meat, onion, garlic, parsley, mint, paprika, salt, and pepper. Mix well.
  4. Stuff the tomatoes with the rice and meat mixture, pressing gently to pack the filling.
  5. Place the stuffed tomatoes in a baking dish, drizzle with olive oil, and bake for 45 minutes or until the tomatoes are tender and the filling is cooked through.
  6. Serve the Domate të Mbushura hot, garnished with additional fresh herbs if desired.
