Ingredients
- 4 large artichokes
- 2 lemons, halved
- 4 cloves of garlic, minced
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the tops. Cut them in half and remove the fuzzy choke with a spoon.
- Rub the cut sides of the artichokes with the halved lemons to prevent browning.
- In a small bowl, mix the minced garlic with the olive oil and season with salt and pepper.
- Preheat a grill pan over medium heat. Brush the artichokes with the garlic and olive oil mixture.
- Grill the artichokes for about 5 minutes on each side, or until they are tender and have nice grill marks.
- Remove from the grill and serve hot.
