Alcatra
Alcatra is a traditional Brazilian beef dish that is marinated and slow-cooked to perfection. It's a popular dish in the Azores, a group of islands in Portugal, and has made its way to Brazilian cuisine with a few adaptations.
Ingredients
- 3 lbs beef chuck roast, cut into large chunks
- 1 cup red wine vinegar
- 1/2 cup soy sauce
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 2 onions, sliced
- 3 bay leaves
- Salt and pepper to taste
Instructions
- In a large bowl, combine the red wine vinegar, soy sauce, olive oil, garlic, onions, bay leaves, salt, and pepper. Mix well.
- Add the beef chunks to the marinade and coat them evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Heat a large pot or Dutch oven over medium-high heat. Add the marinated beef and cook until browned on all sides.
- Reduce the heat to low, cover the pot, and let the beef simmer for about 3 hours, or until it is tender.
- Serve the alcatra hot with rice, beans, and a side of farofa.
