Alcatra is a traditional Brazilian beef dish that is marinated and slow-cooked to perfection. It's a popular dish in the Azores, a group of islands in Portugal, and has made its way to Brazilian cuisine with a few adaptations.

Ingredients

  • 3 lbs beef chuck roast, cut into large chunks
  • 1 cup red wine vinegar
  • 1/2 cup soy sauce
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 onions, sliced
  • 3 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the red wine vinegar, soy sauce, olive oil, garlic, onions, bay leaves, salt, and pepper. Mix well.
  2. Add the beef chunks to the marinade and coat them evenly. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
  3. Heat a large pot or Dutch oven over medium-high heat. Add the marinated beef and cook until browned on all sides.
  4. Reduce the heat to low, cover the pot, and let the beef simmer for about 3 hours, or until it is tender.
  5. Serve the alcatra hot with rice, beans, and a side of farofa.
