Ingredients
- 8 oz spaghetti
- 1/4 cup olive oil
- 4 garlic cloves, minced
- 6 anchovy fillets, chopped
- 1/2 tsp red pepper flakes
- 1/4 cup chopped fresh parsley
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Add the chopped anchovy fillets and red pepper flakes to the skillet. Cook for 2-3 minutes, stirring occasionally, until the anchovies have melted into the oil.
- Add the cooked spaghetti to the skillet and toss to coat it evenly with the anchovy mixture.
- Remove the skillet from the heat and stir in the chopped parsley and grated Parmesan cheese. Season with salt and pepper to taste.
- Divide the pasta among serving plates and garnish with additional Parmesan cheese and parsley if desired. Serve hot and enjoy!
