Aleppo-style Stuffed Artichokes (Qara'at Mahshi)
Qara'at Mahshi is a traditional Syrian dish that features tender artichokes stuffed with a flavorful mixture of rice, herbs, and spices. This Aleppo-style recipe is a delicious and satisfying dish that is perfect for a special occasion or a family meal.
Ingredients
- 4 large artichokes
- 1 cup short-grain rice
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup olive oil
- 1 teaspoon allspice
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 4 cups vegetable broth
Instructions
- Prepare the artichokes by cutting off the stems and removing the tough outer leaves. Use a spoon to scoop out the choke and create a cavity in the center.
- In a bowl, mix together the rice, onion, tomatoes, parsley, mint, olive oil, allspice, cinnamon, salt, and pepper.
- Stuff the rice mixture into the cavity of each artichoke.
- Place the stuffed artichokes in a pot and pour the vegetable broth over them.
- Cover the pot and cook the artichokes over medium heat for 45 minutes, or until the rice is tender and the artichokes are cooked through.
- Serve the Qara'at Mahshi hot, garnished with additional fresh herbs if desired.
