Aleppo-style Stuffed Artichokes (Qara'at Mahshi)

Ingredients

  • 4 large artichokes
  • 1 cup short-grain rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 1 teaspoon allspice
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 4 cups vegetable broth

Instructions

  1. Prepare the artichokes by cutting off the stems and removing the tough outer leaves. Use a spoon to scoop out the choke and create a cavity in the center.
  2. In a bowl, mix together the rice, onion, tomatoes, parsley, mint, olive oil, allspice, cinnamon, salt, and pepper.
  3. Stuff the rice mixture into the cavity of each artichoke.
  4. Place the stuffed artichokes in a pot and pour the vegetable broth over them.
  5. Cover the pot and cook the artichokes over medium heat for 45 minutes, or until the rice is tender and the artichokes are cooked through.
  6. Serve the Qara'at Mahshi hot, garnished with additional fresh herbs if desired.
