Aleutian Abundance
Aleutian Abundance is a traditional dish from the Commander Islands, known for its rich flavors and hearty ingredients.
Ingredients
- 1 lb fresh halibut fillets
- 1 cup wild rice
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are tender.
- Add the garlic and wild rice to the pot. Stir for 1-2 minutes.
- Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 40 minutes.
- Season the halibut fillets with salt and pepper. Gently place them on top of the rice mixture in the pot. Cover and cook for an additional 10-15 minutes, or until the fish is cooked through.
- Stir in the heavy cream and let the stew simmer for a few more minutes until heated through.
- Serve hot and enjoy!
