Aleutian Abundance

Ingredients

  • 1 lb fresh halibut fillets
  • 1 cup wild rice
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are tender.
  2. Add the garlic and wild rice to the pot. Stir for 1-2 minutes.
  3. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 40 minutes.
  4. Season the halibut fillets with salt and pepper. Gently place them on top of the rice mixture in the pot. Cover and cook for an additional 10-15 minutes, or until the fish is cooked through.
  5. Stir in the heavy cream and let the stew simmer for a few more minutes until heated through.
  6. Serve hot and enjoy!
