Ingredients
- 1/2 cup butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup all-purpose flour
- 4 cups fish stock
- 2 cups milk
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound white fish fillets, cut into chunks
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound scallops
- 1/2 cup chopped fresh parsley
Instructions
- Melt the butter in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Sprinkle the flour over the onion and garlic, and stir to combine. Cook for 2 minutes to remove the raw flour taste.
- Pour in the fish stock, milk, and heavy cream. Stir in the dried thyme, paprika, salt, and black pepper. Bring the chowder to a simmer, stirring occasionally.
- Add the white fish, shrimp, and scallops to the pot. Cook for 5-7 minutes, or until the seafood is cooked through.
- Stir in the chopped parsley and cook for an additional 2 minutes.
- Remove the chowder from the heat and let it sit for a few minutes before serving.
