Ingredients

  • 1 onion, chopped

  • 4 cups fish stock
  • 2 cups milk
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound white fish fillets, cut into chunks
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound scallops
  • 1/2 cup chopped fresh parsley

Instructions

  1. Melt the butter in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Sprinkle the flour over the onion and garlic, and stir to combine. Cook for 2 minutes to remove the raw flour taste.
  3. Pour in the fish stock, milk, and heavy cream. Stir in the dried thyme, paprika, salt, and black pepper. Bring the chowder to a simmer, stirring occasionally.
  4. Add the white fish, shrimp, and scallops to the pot. Cook for 5-7 minutes, or until the seafood is cooked through.
  5. Stir in the chopped parsley and cook for an additional 2 minutes.
  6. Remove the chowder from the heat and let it sit for a few minutes before serving.
